AIP Paleo Sweet Potato Hash



A budget-friendly and AIP-friendly recipe for a delicious sweet potato hash with ground meat and aromatic herbs. This dish is easy to prepare and perfect for a hearty Paleo breakfast or brunch.

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1/2 pound ground pork or turkey
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon coconut oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

In a skillet over medium heat, preheat the coconut oil

Add the minced garlic and onion, and saut until aromatic

When the ground turkey or pork is added, cook it through and until it is browned

The meat mixture should be taken out of the skillet and placed aside

If necessary, add extra coconut oil to the same skillet before adding the chopped sweet potatoes

Simmer the sweet potatoes for ten to fifteen minutes, or until they are tender and have turned golden brown

Readd to the skillet with the cooked meat mixture

Add salt, pepper, dried thyme, and dried rosemary to the mixture

To give the flavors time to meld, cook for a further 5 minutes

Enjoy while hot!
