A low-carb version of the classic fried rice, using grated cauliflower as a base. This keto-friendly dish is packed with flavor and perfect for those following a ketogenic diet.
Ingredients:
- 1 head cauliflower, grated
- 2 tablespoons coconut oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 cup soy sauce or tamari
- 1 cup diced cooked chicken or shrimp optional
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions:
Put coconut oil in a large pan and heat it over medium-low heat
Dice the onion, bell pepper, and garlic
Saut until the meat is soft
Move the vegetables to one side of the pan and add the beaten eggs to the other
Eggs should be cooked
Grate the cauliflower and add it to the pan
Add the vegetables and eggs and stir to mix
Add the soy sauce to the cauliflower mix
Mix the sauce around well so it's spread out evenly
If you want to, add chicken or shrimp dices to the pan
Cook and stir until everything is hot
Add pepper and salt to taste
Before serving, sprinkle with chopped green onions
