Ingredients:
- 4 pounds pork shoulder, cut into chunks
- 1 onion, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 2 tablespoons olive oil
Instructions:
In a large bowl, combine the diced pork with the minced garlic, ground cumin, smoked paprika, dried oregano, sea salt, and black pepper
Toss to coat the pork evenly with the spices
Heat olive oil in a large skillet over medium-high heat
Add the diced onion and saut until it becomes translucent, about 2-3 minutes
Add the seasoned pork to the skillet and sear until it's browned on all sides, about 5-7 minutes
Transfer the seared pork and onions to a slow cooker
Pour in the fresh lime juice and fresh orange juice
Cover the slow cooker and cook on low for 6-8 hours, or until the pork is tender and can easily be pulled apart with a fork
Once the carnitas are cooked, remove the pork from the slow cooker and shred it using two forks
Optional: For extra flavor, you can transfer the shredded pork to a baking sheet and broil it in the oven for a few minutes until it gets crispy on the edges
Serve the Paleo carnitas in lettuce wraps or over cauliflower rice
Top with your favorite Paleo-friendly toppings, such as salsa, guacamole, and chopped cilantro
